One of the reasons for the originality and diversity of eating, which is the most basic need of human beings in Cyprus, is the cooking methods. Since the late 1800s, traditional delicacies made in stone ovens built in almost every house throughout the island continue to exist today.
The most well-known and still widely consumed on the island, juicy oven kebab, kleftiko, also called thief kebab, bulla with olives and halloumi, village bread, pilavuna and peksemet have taken their place in the culinary culture literature by being cooked in a stone oven. Although electronic ovens are often used as a cooking method in modern life, stone ovens are used for the traditional taste of these products. In this sense, bulla with olives and halloumi is sometimes cooked in the stone oven in Gave.
The stone oven, which is built in a certain symmetry and order from brick, which is one of the building materials, consists of a door made of metal material in front that can be opened and closed, and a hole on it that allows it to breathe. When the stone oven is lit, the lid of the hole is closed for healthy cooking of the product. To light the stone oven, it is necessary to be aware of all its processes. After a certain period, after the warm-up, the product starts to be cooked at the right time, and a cloth with an oven shovel is used for cleaning.
